- 180 g Salmon fillet
- 150 g Sweet potato (medium)
- 120 g Broccoli florets
- 1 tbsp Olive oil
- 0.5 pcs Lemon
- 0.5 tsp Garlic powder
- 0.5 tsp Paprika
- 1 pinch Salt and pepper

Preheat the oven to 200°C (400°F). Peel the sweet potato and cut it into 1 cm cubes for even roasting.

Toss the sweet potato cubes with half of the olive oil, salt, and pepper until evenly coated. Spread them in a single layer on a baking sheet.

Bake the sweet potatoes for 15 minutes until they start to soften and lightly caramelize.

While the sweet potatoes are baking, season the salmon fillet with garlic powder, paprika, salt, pepper, and a squeeze of lemon juice.

After 15 minutes, push the sweet potatoes to one side of the baking tray and place the salmon fillet on the other side.

Return to the oven and bake for 12–15 minutes, or until the salmon flakes easily with a fork and is fully cooked.

Meanwhile, steam the broccoli for 4–5 minutes until it turns bright green and becomes tender-crisp.

Plate the salmon with the roasted sweet potatoes and steamed broccoli. Drizzle with the remaining olive oil and extra lemon juice before serving.
