Ingredients
- 200g Sweet potato (diced)
- 2 Eggs
- 0.5 Onion (diced)
- 1 Bell pepper (diced)
- 1 tbsp Olive oil
- Paprika, Salt, Pepper
Preparation
- 1
Heat olive oil in a large skillet over medium heat.
- 2
Add the diced sweet potato and cook for about 8–10 minutes, stirring occasionally, until it starts to soften and develop a light golden color.
- 3
Add the diced onion and bell pepper to the pan. Cook for another 5 minutes, stirring frequently, until the vegetables are tender and slightly caramelized.
- 4
Season the mixture with paprika, salt, and pepper, mixing well to evenly distribute the spices.
- 5
Using a spoon, create two small wells in the hash mixture.
- 6
Crack an egg into each well. Reduce heat to low, cover the pan, and cook for 4–5 minutes, or until the egg whites are set but the yolks remain slightly runny (or to your preference).
- 7
Remove from heat and let rest for 1 minute before serving.
- 8
Serve warm directly from the skillet.
