- 60g whole wheat flour
- 1 egg
- 100ml milk
- 1 apple, sliced
- 1 tsp cinnamon
- 1 tbsp honey
- 1 tsp butter
Preparation
- 1
In a bowl, whisk together the whole wheat flour, egg, and milk until you obtain a smooth, thin batter. Let it rest for 5–10 minutes to improve texture.
- 2
Heat a non-stick pan over medium heat and add a small amount of butter (from the 1 tsp). Pour a small ladle of batter into the pan and swirl to form a thin crepe.
- 3
Cook for about 1–2 minutes until the edges lift easily, then flip and cook for another 30–60 seconds. Repeat with remaining batter.
- 4
In the same pan, add a little more butter if needed, then add the sliced apple. Cook over medium heat for 3–5 minutes until softened.
- 5
Add the honey and cinnamon to the apples, stir well, and cook for another 1–2 minutes until caramelized and fragrant.
- 6
Fill each crepe with the warm apple mixture, fold or roll them, and serve immediately.
