- 100g soba noodles
- 80g edamame
- 1 carrot, julienned
- 50g cucumber, sliced
- 2 tbsp soy-ginger dressing
- Sesame seeds
- Green onion

Bring a pot of water to a boil and cook 100g soba noodles according to package instructions (usually 4–6 minutes). Do not overcook.

Drain the noodles and immediately rinse under cold running water to stop cooking and remove excess starch. Set aside.

Prepare the vegetables: julienne 1 carrot and slice 50g cucumber into thin pieces.
