Ingredients
- 2 large zucchini
- 100g ground beef
- 50g tomato sauce
- 30g mozzarella
- 1/2 onion, diced
- Italian herbs

Preheat the oven to 180°C (350°F) and prepare a baking dish.

Slice the zucchini in half lengthwise and scoop out the centers using a spoon to create boats.

Finely chop some of the scooped zucchini flesh for the filling.

Heat a pan over medium heat, cook the diced onion until soft, then add the ground beef and cook until browned.

Add chopped zucchini flesh, tomato sauce, and Italian herbs, and cook for 3–5 minutes until well combined.

Fill each zucchini half evenly with the beef mixture.

Sprinkle mozzarella cheese over the top of each stuffed zucchini.

Place in the baking dish and bake for 18–20 minutes until the zucchini is tender and the cheese is melted.
