Ingredients
- 300g cauliflower rice
- 2 eggs
- 50g peas
- 50g carrots, diced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
Preparation

Beat the eggs and cook them in a pan until just set, then set aside.

Heat sesame oil in a large skillet or wok over medium-high heat.

Stir-fry cauliflower rice for 3–4 minutes until slightly tender.

Add peas and carrots and cook for another 3 minutes until vegetables are softened.
