- 200g lamb rack
- 30g pistachios, crushed
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 200g roasted Brussels sprouts
- Fresh mint

Preheat oven to 200°C (400°F).

Season the lamb rack with salt and pepper on all sides.

Heat olive oil in a skillet over medium-high heat. Sear the lamb for 2-3 minutes per side until golden brown.

Remove from heat and brush the top of the lamb with Dijon mustard.

Press the crushed pistachios evenly onto the mustard-coated surface to form a crust.

Transfer the lamb to a roasting pan and roast in the oven for 15 minutes for medium-rare, or adjust time for preferred doneness.
